Shirley Copeland’s career encompasses many areas of Health and Wellbeing.
She trained in Macrobiotics in London (Community Health Foundation) as a Medicinal Cook and in Switzerland (International Macrobiotic Institute) as a Chef.
Shirley’s life long interest in Food, Health and Wellbeing has also led her to studying Aromatherapy, Nutrition, Mindfulness, Health and Wellness Coaching and more recently the areas of Mindfulness Based Eating Awareness Training (MB EAT) and Mind Body Eating Coaching (MBEC)
She has run her own catering and restaurant businesses and worked as a freelance chef for Mindfulness Training Courses and Retreats.( The Mindfulness Centre and the MTAI,UCD, SHEP, Mindfulness Ireland, Plum Village). She has introduced “Mindful Practice in the Kitchen” to many people. This is a practice that has helped people see how to apply mindfulness in their everyday life.
